- 1 onion, chopped
- 2 cloves garlic, chopped
- 2 tbsp olive oil
- 2 cups marinara sauce
- 1/2 box lasagna noodles
- 1 lb ground beef, Italian sausage, or vegan replacement
- 3 cups chicken or vegetable broth
- 1 cup ricotta cheese
- 1/2 cup parmesan cheese
- Basil for garnish
Making this lasagna soup is a fairly simple process, and it produces a great result.
