It’s hard to beat a good lasagna. They’re flavourful, warm, delectably gooey and incredibly comforting. However, TikTok has come up with a recipe that takes everything that’s delicious about lasagna and changes it up completely. That recipe, of course, is lasagna soup. It’s all the essential components of lasagna, only deconstructed and extra saucy. With all the comforts of tomato soup and lasagna combined, it’s no wonder this recipe has gone viral. Plus, you only need one pot, and it’s super easy to make. So here is how you can make the TikTok lasagna soup, a fresh spin on a classic recipe.

How To Make The TikTok Lasagna Soup

  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 2 tbsp olive oil
  • 2 cups marinara sauce
  • 1/2 box lasagna noodles
  • 1 lb ground beef, Italian sausage, or vegan replacement
  • 3 cups chicken or vegetable broth
  • 1 cup ricotta cheese
  • 1/2 cup parmesan cheese
  • Basil for garnish

Making this lasagna soup is a fairly simple process, and it produces a great result. Lasagna can be a bit fussy to dish out and serve, but with this recipe you get all of the same components eaten easily with a spoon. Start by heating up the olive oil in your pot on medium high heat, and then sauté the onion and garlic for two minutes. Then, add your ground beef and break it up as it cooks. Once the beef is cooked through, stir in the marinara sauce and broth. Once the soup is bubbling, break up your lasagna noodles and add them in. Stir and allow the noodles to cook according to the package instructions, usually 11 to 15 minutes. If you’re not sure if they’re done, you can always spoon one out to test it. One the noodles are cooked, stir in the ricotta cheese, then add the parmesan and basil for garnish. Then, simply serve and enjoy.

What To Have With Lasagna Soup

This lasagna soup is great on its own, but you can also pair it with other components to make a fuller meal. If you’re looking to add some veg into your diet, a green, wedge, or caesar salad is a great side to have alongside this soup. Fresh garlic bread or an oven baked baguette is another great option which you can enjoy on the side or dip into your soup. You can also enjoy it with a glass of water or red wine on the side.
