National Vegetarian Week - Tasty Dinners To Go Veggie With

National Vegetarian Week is approaching fast, some here’s some of the best, easiest and tastiest dinners to go veggie with.

National vegetarian Week begins May 16 and it’s not just a way to raise awareness of the benefits and qualities of a veggie lifestyle, but it’s also a great chance for people to try and switch up their regular diet for a healthier meat free diet.

Benefits of a veggie diet

There are many documentaries, articles, and reports about the health implications that eating too much meat does for your body as well as the damage that is now causing to the environment.

Everybody must do their part to try and help, and going vegetarian will massively help the environmental issues that are currently surrounding meat production.

It’s not only a positive for the environment, but going veggie can be good for heart health – as vegetarians may be up to one-third less likely to die or be hospitalized for heart disease. It can also reduces cancer risk, prevents type 2 diabetes, lower blood pressure, decreases asthma symptoms, and promote bone health, according to Health Line.

This could be a perfect opportunity to give these dinners a try and see if this is something you could be interested in a few days a week or on more of a full time scale.

Extra vegetable rice:

This is one of the most simple and tastiest recipes to throw together at the end of a long day and  can be enjoyed outside as those sunny days hopefully continue.

This recipe includes:

  • Avocado oil
  • two eggs together
  • two carrots finely diced
  • any additional vegetables you wish to include, this can range from peas, Peppers, mushrooms, asparagus or broccoli
  • A pinch of salt
  • Grated ginger
  • two cloves of garlic
  • 3 spring onions
  • 2 cups of brown cooked rice

This recipe is easy as you first cook the eggs, boil the rice, add it all together in a pan and then add your vegetables until they are golden brown.

This stir fry is packed full with nutrients and is a tasty dinner, you can add different flavours and spices depending on what your favourites are.

Vegetarian Tacos:

This recipe will convert those who believe that a vegetarian diet is not as tasty as a normal one.

You can add as many ingredients as you wish to in these tacos, however what I Would recommend includes:

  • pickled onions
  • creamy avocado
  • easy refried beans
  • Corn tortillas

This recipe will ensure you can have a tasty and light bite for dinner. It will show you that a taco does not need beef or chicken to be just as delicious!

Vegetarian Lasagne:

For something a bit heartier and filling, this cheesy warm delight will not disappoint.

Ingredients includes:

  • 2 tablespoons olive oil
  • 3 diced carrots
  • 1 red chopped pepper
  • 1 diced zucchini
  • 1 onion
  • a pinch of salt
  • two big handfuls of baby spinach
  • 2 cups of prepared Mariana sauce
  • low-fat cottage cheese
  • Freshly ground black pepper, to taste
  •  no-boil lasagne noodles*
  • 2 cups of mozzarella cheese

Cook the vegetables, create the cheese sauce, and then the tomato sauce separately.

You can then put together this lasagne.

Place the lasagne noodles at the bottom of the tray, place on your vegetable mix, then top it off with your tomato mix. Then repeat the process again to form layers.

Sprinkle the top of your lasagne with more mozzarella cheese to get that crispy golden effect

A Veggie Roast:

Nothing truly beats a Sunday roast, yet just because you’re vegetarian doesn’t mean you should miss out.

With the options of veggie gravy, vegetable sausages, nut roast, and even a vegetable bake for pie of some sort , would be an excellent supplement for your traditional meat.

Of course this means you can still enjoy the tasty roast potatoes, peas, cauliflower cheese, Yorkshire puddings, roasted carrots or parsnips, or anything that you wish to add to this tasty treat.

Pizza Pitas:

This is an easy and quick way to enjoy a pizza without having to spend on delivery!

All you need is some warm brown Pitta breads, heat these in the oven, place on some mariana sauce and then sprinkle with mozzarella cheese.

You can then add on whatever topping she like come on my favourites include rocket, feta, mushrooms and olives.

These make for a great and tasty pita pizza.

Simply place these creations back in the oven for around 10 minutes on a low heat to enjoy your homemade and crunchy pita pizza slices.
