Quick And Simple Flatbread Recipe Perfect For Student Cooking

Student cooking often means boiling up some pasta, or microwaving a pre-made meal you’ve picked up from the supermarket on the way home. Pot noodles, toast, and wraps are also seen in student kitchens all around the county, and it’s easy to understand why. They are quick, cheap, and simple to make.

That is exactly why, as a student, I find myself whipping up these flatbreads a few nights a week. They take just three ingredients to make the dough, and can be prepared and cooked up in ten minutes max. Being able to cook something from scratch in your uni kitchen also makes you feel that little bit healthier and put together, which can go a long way in between cafeteria food and ready meals every night!

Let’s take a look at this simple, quick, and delicious recipe.

Ingredients

For the flatbreads

300g self-raising flour

300g natural yoghurt

1 teaspoon baking powder

For the garlic butter

Parsley

Two tablespoons butter

Two teaspoons minced garlic

Method

For the flatbreads

In a large bowl, mix together the yoghurt and flour with a spoon. When the ingredients start to come together, use your hands to pat it and place the dough on a floured surface.

Knead the dough for about a minute or two (this recipe doesn’t require as much kneading as a traditional bread recipe). Separate the dough into golf ball-sized circles.

Use a rolling pin to roll each piece out until they are about 2mm to 3mm thick. Use a knife to score six lines into the centre of each flatbread.

Pre-heat up a pan with some olive oil and place the flatbreads on one by one. Cook them for one to two minutes on one side, then flip over and cook for the same amount of time on the other. They will puff up and turn brown.

For the garlic butter

In a bowl, mix together the softened butter, garlic, and parsley. You can also add in some parmesan if you want a bit of a cheesy kick. When the flatbreads are cooked, spread the garlic butter on top and watch as it melts into the warm bread!

Serve with

The great thing about this recipe is that the flatbreads can go with almost anything. Serve with chicken, couscous, and veggies, curry, meatballs, or you can even turn them into gyros by piling on meat, chips, salad, and tzatziki and folding up before eating!
